So I recently got engaged and I realized, I'VE NEVER COOKED IN MY LIFE. How in the world am I gonna be a good wife?!!?! So I took it upon myself this year as a New Year's resolution to teach myself how to cook. So for the month of January these are the things I cooked.
Caramel Chocolitas! The dessert of the month. I would give it a 7 out of 10. It's really really chocolatey and you definitely need a glass of milk nearby.
The first meal I made was the sausage fontina frittata. It for me, got a 6 out of 10. It was edible but nothing I wanted to eat again.
Next meal I made was the bean and beef enchilada casserole. This would turn out to be the winner of January. It gets a 9 out of 10. It was delicious. Pinto beans, enchilada sauce, beef and corn tortillas. Yummy yum!
Last week I made the buffalo chicken potato bake. If it didn't have the chicken I wouldn't have liked it. So this meal gets a 7 out of 10. Good but I don't think I'll be making it again.
This week to finish out the month I made the Chicken Parmigiana only I added Bowtie pasta underneath it. It gets an 8 out of 10. I would love to make it again. Since I'm still a learner I didn't do so well on cooking chicken so I'd love to have another chance at it to make it even better.
SO ! The winner is...... The bean and beef enchilada casserole!! Look it up!!! Soooo good! Ill definitely be making it again in February! 😀
